\The spicing in this dish is inspired by South Indian flavours - black mustard seeds and cashew nuts.
Similar to the potato stuffing that goes into a dosa - the classic rice and lentil crepe - this potato dish is an excellent accompaniment with paratha. I spent almost a decade in South India as a child and this was one of the dishes that my family continued to eat when I returned to Calcutta. (Asma Khan)

Cooking Guidelines All cooking appliances vary. This is a guide only. Always ensure food is piping hot throughout before serving.


Oven cook - Preheat oven to 190C, 170C Fan, Gas 5. Remove sleeve and place on a baking tray on the middle shelf of the oven. Cook for 20 to 25 minutes. Allow to stand for 1 minute. Stir and serve.


Microwave - Remove sleeve and pierce film several times. Microwave (800W) for 3 minutes, peel back film, stir and re-cover. Cook for a further 2 minutes. Allow to stand for 1 minute. Stir and serve.
