Middle Eastern Style Lamb Traybake
Flavour Kit
250g lamb, diced into approx 3cm cubes
375g new potatoes, diced into approx 1cm cubes
1 red onion, cut into 8 segments
100g greek yogurt
1 red pepper, diced into approx 3cm pieces
Simple Swaps
Replace lamb with salmon or chicken
Make a veggie tray bake using canned chickpeas, aubergine, red pepper and red onion
Prep time 10 mins
Cook time 30 mins
Preheat oven to 220C/Fan 200C
1 Put the potatoes, pepper, red onion, potato seasoning with 2 tbsp of oil in a bowl and toss. Tip onto a tray and bake for 20 minutes.
2 Meanwhile, heat a frying pan to a medium-high heat and brown the diced lamb for 3 minutes.
3 Drizzle the 7 spice paste over the lamb.
4 Place the lamb on top of the potatoes and cook for a further 10 minutes.
5 To serve, top the potatoes and lamb with a drizzle of yogurt. Delicious served with a squeeze of sliced lemon and sliced cucumber.Package Type
